Triple Chocolate S'mores Cookie Cake

'Chocolate, chocolate and more chocolate with some marshmallow and cookie and then more chocolate' - that was the request from my eldest kid for her birthday cake. She loves her dark chocolate and only eats desserts that are chocolate base.

Dark Chocolate Pink Rock Salt Caramel Cookie Slices



Do you like dark chocolate? Do you like caramel? I like both and decided to adapt Donna Hay's classic chocolate caramel slices with a sprinkling of Himalayas pink rock salt to give the already rich and luxurious treat a contrasting depth of flavour.

Matcha Black Sesame Vanilla Sandwich Cookies

 

I love Matcha! This cookie not only uses matcha, it also incorporate deliciously healthy ingredients such as black sesame and almond meal. I realized that almond meal helps to bring out the flavour of matcha more than compared to just using plain flour in a cookie.  

The cookies are not too sweet as matcha powder do tame down the sweetness. The added vanilla filling, gave a boost to the flavour and texture.

Lemon Cookie Slices

 
When life gives you lotsa lemons (actually I just could not resist that beautiful bag of lemons and there were 10 lemons in a bag!) , you gotta make lemon cookie slices (15 generous slices in total). They shout sunshine to me. And they were so puckering yummy!

ANZAC Biscuits

I wanted to bake this biscuit because it reminded me of my recent family trip to Australia. The ingredients used were simple and healthy. There is no need for whisking or creaming or waiting for ingredients to come to room temperature. Just a weighing machine, mixing bowl and a saucepan will get you munching on these in no time.

Sliced Jam Crumble Cookie Bar


A new school term have started and these were baked and packed into my kids school lunch boxes for their break time. The cookie bar consists of a shortbread base, layered with jam and topped with an oat crumble. A big batch of this can be easily whipped up  and they keep well in the fridge up to a week.

Blushing Pink and White Kueh Bangkit


Hello 2016! I had a good Christmas and New Year break, spending time and feasting with family and friends. In nearly a month's time, it will be Chinese New Year! The festive mood does not seem to end. Let the celebrations and feasting continue!

Kueh Bangkit is my family's favorite Chinese new year cookie. It is crumbly, melts in your mouth releasing the coconut and pandan (screw pine) flavor.  Last year, I made these cookies using dry fried tapioca flour. This year, I chose to dry fried sago flour instead. The texture is even more crumbly and melt in your mouth.

Minty Candy Cane Cookies


Christmas is drawing near! This is my biggest bake (in quantity) for Christmas. A total of 215 pieces. They tasted just like the real minty candy cane lolly but in a cookie! They are made without any artificial coloring and flavoring. Beetroot powder was used to colour the red portion of the dough.

White Chocolate Shortbread Cookie Bar


The weather have been very cooling for the past 2 weeks. Really feels like Christmas is coming. To start off my Christmas bakes, I made a shortbread cookie from a recipe that I kept to bake in the cooler months. This recipe yielded a shortbread cookie bar that holds it shape but once you bite into it, the richness of the butter and crumbly cookie will melt in your mouth.

Funfetti Lolly Cookies

Rum and Raisin Biscotti


Biscotti originates from the medieval Latin word biscoctus, meaning "twice-cooked/baked." Once baked goods are twice baked, they became very dry and could be stored for long period of time. This was useful especially when refrigeration was non-existence.

This cookie cake was baked for a class of 13 years old. They are really a happy lot.

Matcha Sable Viennois (Pierre Herme)

 
Christmas baking season is about to start for me. I was looking around for a cookie recipe and found this recipe at My Kitchen Antics. It is a recipe by Pierre Herme. I added 1 teaspoon of match powder to the flour before sifting and transformed the cookies into matcha sable viennois.

Macarons - The Italian Way



Front clockwise: Matcha sprinkled shell with bitter sweet chocolate filling, Chocolate shell with bitter sweet chocolate filling, Vanilla shell with passion fruit curd, Cocoa powder sprinkled shell with
bitter sweet chocolate filling, Raspberry sprinkled shell with white chocolate raspberry filling.

It was quite a fearful first attempt for me a few years ago to make macarons. I wanted to make them and was reading as many blogs as I can on the subject matter. (such as this blog)  I was so impressed at the passion of these bloggers as they went to the extend of very systematically showing the hows and whys in making and breaking one's macarons. I am thankful for all their effort and finally pluck up my courage to make them.
