Mango, Pear and Parsley Salsa

This simple salsa is a great side dish to a meal that consists of roasted meats, such as a roast beef or roast rack of lamb (which was what I made as a side for). It refreshes the palate in between eating the rich, tasting roasted meat.





Mango, Pear and Parsley Salsa
(serves 4)
Ingredients:
1 ripe, firm mango
1 ripe, firm Anjou pear
1 big tomato
1 sprig of parsley, finely chopped
1/2 tsp sugar 
1/4 tsp salt

Directions:
  • Dice the mango, pear and tomato into cubes and place in a mixing bowl.
  • Add sugar and salt into the mixing bowl and stir to mix. 
  • Add the parsley and stir gently to mix through.
  • Leave the mixture in the fridge for 1/2 hour to let the flavors get to know each other ;) and chill.
