Fresh Figs with Thyme Infused Honey

I like fresh figs. I like how the simple, beautiful shades of purple on the outside contrast with the complex white and pinkish structure on the inside. Fresh fig is very subtle in flavour and I like the combination of the slightly sweet, soft flesh against the crunchy, seedy and sticky interior.

Honey Lemon Berry Filled Loaf Cake



When I saw this Honey Lemon Berry Filled Loaf Cake in a baking book, I was instantly attracted to it and made plans to bake it as soon as I could. It is filled with raspberries and blueberries inside out. The simple decorations on the cake allow the natural colors and texture of the fruits to be placed in the limelight. It is simple and beautiful.

Ercolini Pear Almond Tart

 
I love tarts. I know I should be making more cookies but I think that tarts are almost...almost like cookies.

A tart consists of a shortcrust pastry, technically is a shortbread cookie, which is topped with a filling. Hahaha...I think I am trying too hard to wiggle myself out of this "cookie and bull" story.

Orange Raspberry Cheesecake



This cheesecake is made up of a base layer of crushed digestive biscuit mixed with orange zest. Cointreau, an orange liquor, is added to the cheese cake layer to further infuse the cake with the orange flavour.

White Nectarine Crumble and Almond Galette




This was baked using the leftover tart dough and frangipane from baking the Autumn Honey Pluots and Almond Tart. The leftover tart dough was not enough to fit a tart ring so I decided to make a free formed tart - a Galette. Rustic looking hey.

Brulée Banana Walnut Dark Chocolate Chip Loaf Cake


For the past 2 days my youngest have been at home with me. We went out to visit a museum yesterday. Today, we made banana loaf cake, and hidden within were morsels of dark chocolate chips and walnuts.

Cranberry Scones


These cranberry scones are delicious eaten on their own. They paired very well with the homemade strawberry vanilla jam and not forgetting with clotted cream (I did not have clotted cream at hand) or a great deal of butter.

The scones are crunchy on the outside, from the coarse sugar sprinkled on top of them, tender and buttery on the inside.

Blueberry Crumble Loaf with Lemon Glaze

It is with a heavy heart that I am typing out today's blog. It is a sad, sad day. This morning, Singapore's first Prime Minister and founding father, Mr Lee Kuan Yew passed away.

My television is tuned to the news where a constant stream of Mr Lee's political journey is being telecast. He dedicated his whole life to building Singapore. May we not forget his and all our pioneer leaders spirits. The spirit of discipline, determination and resilience to make Singapore a stable and safe place to live, work and play. A place where I call home truly and have the freedom to do what I enjoy.

This fruit tart was a bake I did as a birthday cake for a friend in church with the help of other cell group members (K and AB) too. The birthday girl loves fruits and was given the title of "fruitarian".

I made this cake just in time for the Christmas season! It is one cake that my family will insist on having for Christmas. The spices and richness that comes from the brown sugar just reminds us of the season.

Mango, Pear and Parsley Salsa

This simple salsa is a great side dish to a meal that consists of roasted meats, such as a roast beef or roast rack of lamb (which was what I made as a side for). It refreshes the palate in between eating the rich, tasting roasted meat.

Fresh Figs

 
Singapore, a place that I live, is a small island state that imports most of our food. I am blessed to be able to eat the food around the world without having to fly to the country of origin. 



I found these black figs from Turkey recently in the supermarket. They are so beautiful. Their dark, shiny, purplish skin with a reddish interior. What a contrast of colors! How can we not be amazed with God's creations?


I usually have fruits without cooking them as the cooking process will destroy the vitamins and minerals in them. This is how I had the figs for breakfast over 2 days:

Blueberries Crumble Cake

Blueberries are selling at a very low price in the supermarket this week. 4 boxes of ORGANIC blueberries going for $8.35, that is like $2 for each pack. I grabbed 8 boxes and used 2 boxes today to make a crumble cake.  I like the idea of a crumble cake (known also as coffee cake by the Americans, even though there is no coffee used in the recipe) because I get to enjoy both the cake and the cookie like crumble. :)

I have used the blueberries muffins recipe from earlier post and instead of baking into individual cupcake, I bake it in a 9" round pan and added crumble on top of the cake.

This week, my cell group craved for apple crumble. As it is on my to-bake list, I decided to make them my guinea pigs. 
The crumble turned out very well and the recipe will be a keeper.

My family's Version of the Durian Penyet Dessert



It's the season to eat durian. The green, thorny fruit, that lures its admirer and scares away the faint hearted. 
In our family, only my husband and I eat it, while my kids will pinch their noses and shun away from it. We hope that as we eat more of it, the kids will get use to the smell and eventually give it a try.

Blueberries are on sale in the supermarket recently. I picked up a few boxes to have with my breakfast cereal and used one box to bake this blueberries muffins. Blueberries is one of the super fruit with very high antioxidants and lots of vitamins.

Pineapple tart pastry...


Yes...pineapple tarts in the April. I am one who believes that we can enjoy festive cookies anytime of the year. I feel that during the festive season, I usually I ate so much of these cookies that I actually get quite sick of them. And during festive months, cookies are mass produced months before the festival, which made them laden with preservatives and/or trans fats thus quality of product are compromise. As a home baker, I can whip up these cookies, using the best ingredients, as and when my family craves for them.
